Production area: C.da Cavaliere, Santa Maria di Licodia, Mount Etna. Exposition: south. Altitude: 950 m a.s.l. Soil: volcanic sand and rocks. Grapes: Carricante 100%. Training system: bush-training with chestnut poles. Up to 100 years old vines. Plantation density: on average 7000 vines/Ha. Average yield: 50 quintals. Harvest: manual, first week of October. Vinification: soft pressing and fermentation in stainless steel tanks with indigenous yeasts. Ageing: 12 months in stainless steel tanks and tonneaux in contact with the fine lees and 8 months in the bottle. Alcohol: 12% vol.

Straw yellow colour with green nuances, with an intense, rich and ample bouquet of orange blossom, citrus and tropical fruits with oregano and flinty notes. It is mineral and sinuous with a pleasant acidity and a sapid finish.
